New Menu Item: “Bridge of Friendship”

Chef Casey is always introducing new and innovative cuisine feature fresh local ingredients at Cafe Pesto in Hilo! Recently, his team has come up with what could only be called the “Bridge of Friendship” – a fresh catch special, made with Ono, Ahi, Mahi or Snapper – served on two chopsticks (the bridge) with a consume and mazuma! All of the ingredients were sourced locally on the Big Island of Hawaii.

This is the first in a series of articles that will focus the process of preparing our new dishes as well as highlighting the some of the local farmers and vendors with which we work!

The base of this dish centers around our FRESH and locally caught fish that we get from Suisan Fish Market – DAILY!  We serve it on two chopsticks over a charred lemon ponzu. Ponzu is a delicate fish, ginger and soy consume reduced with miring and flavor that is enhanced by a local lemon! This is served alongside a bed of Mazuna from Mother Natureʻs Miracle Farm in Paauilo and Kawamata tomatoes!

Suisan is one of many local vendors we use at Cafe Pesto in Hilo and they continue to provide freshest cuts of ahi, ʻono, and mahi that we use for our Fresh Catch Special!

Some of the other aspects of their fishing practices include:

  • Fisherman practice hand-line catch and  bring back fish within 1-2 days
  • Fisherman practice environmentally safer methods than long-lines
  • Fisherman are HACCP compliant which addresses food safety through the analysis and control of hazards from raw material production to consumption of the finished product.

Chef Casey makes it a point to check daily and pick the freshest and highest quality cuts in order to help make this dish a success!
