Here at Cafe Pesto we LOVE using local ingredients! Recently, we used Ahualoa goat cheese in a few of our dishes like Ahualoa Goat Cheese Mashed Potatoes and Ahualoa Goat Cheese Panna Cotta with Honey Crisp Tuile and Strawberry Compote. We are so lucky to have a local goat dairy right on the Big Island, meet Hawaii Island Goat Dairy.
Hawaii Island Goat Dairy is located in Ahualoa, on the Big Island of Hawaii on a 10 acre macadamia nut tree orchard. This farmstead goat cheese operation established in January 2001 and is owned and operated by Dick and Heather Threlfall. The free range goat herd consists of several dairy goat breeds, mainly Toggenburgs, Nubians, Alpines, Saanens, and various crosses.
Dick and Heather also make their own cheese, Big Island Goat Cheese that is either natural flavor, dill/garlic, macadamia nut basil pesto,Rocoto pepper, and Chipotle pepper flavors. The majority of the cheese is sold wholesale to the many fine restaurants and chefs throughout the state of Hawaii.
