Each restaurant/chef will create an unique dish using one locally grown and grass-fed meat: beef, pork, lamb, goat, mutton, or wild boar, plus a cornucopia of fresh island fruit, veggies, honey, spices and beverages. Chef Casey Halpern is assigned “commercial pork” for the event.
“The purpose of the Mealani’s Taste of the Hawaiian Range is to provide an educational venue to encourage and support local production of agricultural products through social, cultural and scientific exchanges. It features a diverse array of talents brought together for the purpose of developing an ethos of compatibility, tranquility and sustainability with this land we co-inhabit.”
