Better Burger Project with Chef Casey Halpern and Chef Moses Tavares

Better Burger Project Cafe Pesto

Cafe Pesto Hilo Bayʻs Chef Casey Halpern and Cafe Pesto Kawaihaeʻs Chef Moses “Moki” Tavares are participating in a Month long competition called the Better Burger Project put on by the James Beard Foundation and we need your help!

What is the Better Burger Project?

According to the Better Burger Project webstie:

Burgers are one of the most creative culinary platforms; chefs have been innovating and evolving the dish for years. Now, through this special menu promotion, you can create a “Better Burger” by blending ground meat with finely chopped mushrooms. Your burger will be better for your guests—with unmatched flavor and inherent nutrition benefits—and our environment at large.

Burger-CafePestoWhat are we preparing?

“A Heathier Version of an American Classic”

  • 1 1/2 lb – local free range beef  (with a ratio of 70% meat to 30% fat)
  • 1/2 lb – Hamakua Mushrooms – sliced
  • 1 tablespoon – minced shallot and garlic
  • 1/2 cup – port wine

This combination of local grass fed beef and mushrooms from our friends at Hamakua Mushrooms provides a delicious taste combination that will be hard to find anywhere else in the world! We get our mushrooms from Hamakua Mushrooms farms right here on the Big Island and our beef comes from Kulana Foods. Kulana Foods get their free range, grass-fed, and hormone free cattle from various farms around the Big Island.

BEST place to eat on the Island and the prices are very, very reasonable and the food FANTASTIC! We absolutely love it, great service and the desserts heavenly…. made with lots of pride too! Make sure to have the Sweet Coconut Tart enough for two! It is our go to when on the Island of Hawaii! YOU MUST PUT IT ON YOUR LIST OF PLACES TO EAT!
